A few weeks back I got called for jury duty, for which I was NOT happy about. I did my service, of course, tempting though it was to postpone, and was overjoyed when I was released. And since I was released around 1pm, I decided to treat myself to a delicious lunch at Il Bambino. One of the things I chose to eat was the Beets with Baby Arugula salad – it also involved fresh goat cheese and toasted walnuts. It was heaven. 

It comes on the plate, one big baby arugula pile.

You have to peek in there to see all the tasty bits of beets, goat cheese, and walnuts.

Look at all that deliciousness! It was dressed with a sharp dressing, which I was very happy with. I tend to prefer more acidic vinaigrettes over oily ones. The whole combination was beautiful.

I devoured it with gusto, leaving a mostly empty plate behind at the end.

I would absolutely get this again. Highly recommended, especially if you like beets and goat cheese.
